Carotenoids are the plant pigments behind the colour of carrots, tomatoes, and salmon — and the reason most beauty beverages look golden. Here is what they are, how they behave in the body, and what the evidence honestly supports.

What are carotenoids?
Carotenoids are naturally occurring pigments — yellow, orange, and red — produced by plants, algae, and some bacteria. Humans cannot make them, so every carotenoid in your body arrived through food. More than 750 have been catalogued; a few dozen appear in the ordinary diet, and roughly a handful dominate the conversation in nutrition.
They fall into two families:
- Carotenes (pure hydrocarbons) — beta-carotene, alpha-carotene, lycopene.
- Xanthophylls (oxygen-containing) — lutein, zeaxanthin, astaxanthin.
The ones you will see on a label
- Beta-carotene — carrots, sweet potato, pumpkin, spinach, kale. A provitamin A carotenoid: the body converts it into vitamin A on demand, which is a self-limiting process and part of why dietary beta-carotene does not cause vitamin A toxicity the way preformed retinol can.
- Lycopene — tomatoes, watermelon, pink grapefruit. Notably more bioavailable from cooked and processed tomatoes than raw ones.
- Lutein and zeaxanthin — leafy greens, egg yolk, corn. Best known for concentrating in the macula of the eye.
- Astaxanthin — the microalga Haematococcus pluvialis, and the reason salmon, shrimp, and flamingos are pink.
How carotenoids reach the skin
Carotenoids are fat-soluble. They are absorbed in the small intestine alongside dietary fat, packaged into lipoproteins, and distributed through the bloodstream to tissues — including the liver, adipose tissue, and the skin. This is why two practical details matter more than most marketing:
- Fat improves absorption. Carotenoid uptake from a meal rises substantially when some fat is present.
- The timescale is weeks, not hours. Tissue carotenoid levels shift gradually with sustained dietary intake.
Because they deposit in skin, carotenoids contribute a subtle warm colouration. At very high sustained intakes this becomes visible as carotenemia, a harmless yellow-orange tint most often reported in infants fed large amounts of carrot or squash purée, and in adults consuming unusually large quantities. It reverses when intake drops. It is not a tan, and it is not the point.
What the research does and does not show
Carotenoids are well established as antioxidants — molecules that neutralise reactive oxygen species generated by normal metabolism, UV exposure, and pollution. Beyond that, careful language is required:
- Studies examining dietary carotenoids and measures of skin appearance, tone, and elasticity exist, but many are small, short, or use supplement doses rather than food.
- Results are heterogeneous, and effect sizes where reported are modest.
- Regulatory bodies have authorised very few skin-related health claims for carotenoids. Where an authorised antioxidant or skin claim exists in a given market, it typically belongs to a vitamin such as C or E, at a specified amount, not to a proprietary blend.
- High-dose beta-carotene supplementation has been associated with increased lung cancer risk in smokers in large trials. That finding concerns isolated high-dose supplements in a specific population, not dietary intake — but it is the reason responsible formulators keep amounts moderate and do not treat "more" as "better."
The honest summary: carotenoids are a legitimate, well-studied class of dietary nutrients with real antioxidant activity, and an area of continuing research with respect to skin. They are not a proven cosmetic intervention.
Getting carotenoids from food
Food comes first, and it is not difficult. Sweet potato, carrots, butternut squash, red pepper, tomatoes (cooked, ideally with olive oil), spinach, kale, cantaloupe, mango, and salmon all contribute. A beverage is a convenience layer on top of a diet, never a replacement for one.
